Let's take a look at the ingredients for this pumpkin pie alternative.
2 1/4 c all purpose flour 1 1/2 tsp pumpkin spice 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt
1 c (2 sticks) butter 1 c granulated sugar 15-16 oz can of pumpkin 2 eggs 1 tsp vanilla
Start with the traditional creaming of the butter and sugar.
It starts off lumpy since the butter is still cool and hard.
But it eventually turns out allright.
Combine the dry ingredients while the butter and sugar are creaming.
You can just use a spoon like this to stir it up and make sure it's well mixed.
If you want to make things easy on yourself and help things go quicker, go ahead and spend just a couple of minutes getting all of your stuff ready.
When you first add the pumpkin it looks a bit strange. But the aroma of the pumpkin makes up for that.
As it mixes and you push down the sides it will start to mix in very well.
See, all mixed and looking good.
Add and mix the dry ingredients in 1/3's to 1/4's at a time.
Once mixed well, you can push down the sides and add the next batch of flour.
This is looking great. Smells like pumpkin and everything mixed well.
If needed, give it a spin for a bit longer.
Now, take your scoop and place them out on the pan. Wait, we really aren't done. I put these down before adding the chocolate chips so that I'd see how the base cookie taste.
Take the bag of chocolate chips... slice one corner off and..
Dump into the cookie dough.
Just mix in with a spoon or spatula.
Laout the little soldiers ready to go on a non-stick cookie sheet.
Bake at 375 for 12-20 minutes... these worked well at 10-12 minutes.
See... they worked out great. I think they could have stood a bit longer in the oven if you want to cut down the softness some. Maybe 15 minutes... but I don't see how 20 would work.
Let cool on something like this great wire rack.
Serve them up warm with some milk if you want to see them all disappear.
The original recipe called for a basic glaze to be put on them. After trying a couple naked... I would have to agree that a glaze (milk, sugar, vanilla) would work well on these.
What I liked... good pumpkin taste with some sweet tasting chocolate. What I didn't like... a little puffy and light (which others will love). What I learned... I like pumpkin pie, I like pumpkin cookies... simple as that.
