Nothing like some good muffins for breakfast. And when the craving hits, you want something with taste and substance.
I was suprised when my mother told me way back that my favorite muffins were made from Malto-Meal.
Yep - Malto-Meal.
Similar in texture to a good cornbread and when they are fresh from baking, they take a cinnamon butter or honey great.
Go buy a box and get going, their easy enough to do just about any morning.
I'm too lazy today to include the recipe. It's on the side of the box. If you want to make these, you gotta buy the Malto-Meal... so you'll have it. I didn't stray from the recipe this time.
All you absolutely need here is...
Malto-Meal, Oil, Flour, Sugar, Baking Powder, egg, milk, vanilla, salt
Optional is the cinnamon and brown sugar.
The key to making this up fast is to get your stuff laid out and ready to go... along with a medium size mixing bowl. The one I have here is way larger than I needed, but it's what was clean.
Mix your dry stuff... Malto-Meal, flour, salt, sugar, salt and baking powder
Give it all a quick mix'in.
Then go for the wet stuff...
egg, vanilla, milk, oil
Mix.
It really is that simple.
No blender needed.
No excuses now.
Get you one buttered muffin pan.
Sprays would probably work... but in this case I wanted to try buttering all of the holes.
It was messy.
Next time I'll try some spray.
Fill up each about 3/4's of the way.
I took a half cup measuring spoon and started off with a half cup in each, and then came back to even out.
Do it however you want... just try to keep them even.
Now, here's where I thought I'd get fancy and try some brown sugar on some. Besides, what's not to like about a nice sugary crunch on the top layer?
On some I even sprinked some cinnamon on top to give it a try.
Put them in the oven and bake per the box instructions... then they come on out looking like this.
See, it looks great. Don't pay any attention to the crystallized brown sugar on top of the pan. It's really not that bad.
OK, the plain muffins are great... as usual. The box recipe is perfect and shouldn't be messed with... at least not in the way I did.
This does look good. And it really does taste good. The ONLY problem really was with the edges where the brown sugar accumulated on some and burned.
While it made for a nice contrast in texture, it's not what I was hoping for.
OK, so maybe I should stop trying to put brown sugar and cinnamon on everything. But it did look pretty. Maybe next time I'll swirl it into the muffin mix once in the pan... that's a thought.
