While we are right in the midst of football season, you might as well add this one to your appetizer list.
Jalepeno Bacon wrapped around chunks of chicken... nothing like making a good-for-you food down right sinful and spicy to boot.
The ingredients are simple... Chicken and Jalepeno Bacon.
Wait... don't have an HEB with Jalepeno bacon? Damn shame. I know how you feel. I had been planning on doing this with the chipotle bacon but they discontinued it. Too bad, because I'm sure after it was up here, they would have sold out.
You can use some peppercorn bacon from some other place... it'll work... just not with the bite.
Start with the standard chicken breast.
Cut it up into some bite size pieces. Try to keep them all about the same overall in order to allow them to cook the same.
Here we've got 3 breasts ready to go.
Now for the bacon... doesn't that look great?
Here's a close up... you just know it's going to be good with that seasoning strewn all across.
OK, you only need half the bacon... so slice in two.
Now get you a little prep workflow going like this.
And all you've got to do is take a half slice of bacon, wrap around the chicken and pierce it with a toothpick.
How simple is that... and the rewards are great... trust me.
Just wash your hands before doing anything critical if you know what I mean.
You should be able to get the three breasts (~1.25 lbs) and needed bacon all on one pan... well, at least I did.
350F for 20 25 minutes (you are looking for the bacon to be good and crispy)... and you are almost there.
Oh just look at that bacon and seasoning... Just thinking of popping a couple of these in my mouth makes me thirsty.
I said almost there... because you still want to take a min and unload on some papertowels to wick away some of the excess liquids.
Of course, it's almost saddening to lose some of that liquid to the paper towel... but hey, it'll be OK.
And there you have it. Jalepeno wrapped chicken poppers just ready to go to the masses.
Just have the cold refreshments standing by.
