In this case everything turned out pretty good and will be worth repeating as well as tweaking for taste.
Starting off with the ingredients... ~1lb ground beef (not shown), fajita seasoning to taste (~1tbs), 1 can diced tomatoes (I like the petite ones), 2 cans chicken broth (only one shown), chili powder to taste (~1/2 tbs), cumin (~1/2 tbs) and 1 boil in bag thing of rice (you'll be taking it out of the bag), ~1 tbs minced garlic (not shown), ~1 tbs chopped onions (not shown).
Throw down some ground beef for browning
Go ahead and spread it out... makes it go faster
Add the garlic and onion
Don't forget to mix it up while it browns
Don't worry about the boiling action... just cooking the water out
Here's where I added the cumin, chili powder, fajita seasoning and whatever else floats your boat
Time for the can of diced tomatoes
And the chicken broth (amount is based upon the rice instructions... the one I used said it needed about 2 cups liquid... which I just translated to 2 cans broth)
And the rice... out of the bag of course
Bring to a boil
Reduce to a simmer and put a lid on it
After about 10 minutes (undisturbed) it looks like this
Mix / fluff it up some and catch a whiff of those aromas
Now, how to plate the Ground Beef Mojo? Start with some tortilla chips on the plate
Drop down a hearty helping of the mojo
Top with some cheese... classic cheddar here, but some whte mexican would be great
Stick a chip in it... you are done.
