Grilled Cheese and Bacon Sandwich PDF Print E-mail

I grew up eating this classic sandwich and still fall back to it when the craving hits.  During most of my life this was done with some processed cheese and real strips of bacon, it can be done with real cheddar cheese and packaged bacon bits.  However, I think the absolute best combination would be some spicy chipotle bacon and real cheddar cheese.  I'll let you know how it works when I get to it.

 

Ingredients:  Cheese (your choice), bread (your choice, but I like using the 7 grain stuff from Mrs. B's more than plain white), bacon (either bits or strips... strips are better, but bits work fine) and butter (real or fake, whatever you have and prefer works)

OK, in order to make this fast, I start by dropping a small dab on a cold skillet and turning things up to about medium to med-high.  The butter is my "ready gage" as you'll see

While the skillet is heating, prep your bread with some butter and get your cheese sliced (or out of the wrapper)

Once the butter has melted and bubbled up some

Like this...

Spread it around (doesn't really serve a purpose other than to prevent a wet butter spot on your bread)

Now slap down your first piece of bread butter side down

Layer your choice of cheese

and bacon

and more cheese...

and then top with the other piece of bread (butter side up of course)  Also,try to match up the bread as it was in the loaf in order to prevent unfortunate cheese and bacon loss from unmatched edges

The benefit of starting off with the hot skillet is that about the time you've built your sandwich, it's about time to flip

Now this is optional... but I like to give the sandwich a decent press with the spatula to bring it all together

After a couple (2-3) minutes, go ahead and flip again to check on how she looks.  If things are toasting up enough, feel free to flip back and forth a couple of times to get it to the darkness you prefer while maintaining the evenness

Move over the a plate and you are ready to go.
