thumb_spaghetti_basic_12.jpgYou just can't beat a simple spaghetti recipe.  This one is simple and great.  What's even better about it is that there's no chunky vegetables to get in the way of the meat!

 

 

 

 

 

 

 

 

 

Ingredients:

1 clove garlic

Onion to taste

1 lb ground beef (I use the leanest I can get 94/6)

2 cans (15 oz) tomatoe sauce

1 can (small) tomatoe paste

Oregano to taste

1 - 2 bay leaves

salt to taste

pepper to taste

3 tablespoons sugar

 

Assembly:

Put the garlic and some good shakes of dry minced onion in to a pan on medium high heat

Drop in a pound of ground beef

Brown the beef  (once browned, you can drain if you are into that, I am not)

Add the two cans sauce and one can paste

Shake in some oregano

drop in the bay leaves

add some salt (start with a teaspoon, you can add more later)

put in the pepper (again, you can start small, add more to taste later)

put in the sugar (the amount is based upon your taste and the tomatoes... 3 tablespoons works for me)

Let simmer for as long as you want... but at leat 10 minutes to make sure everything is hot.  If it looks to get too thick, you can add water... but Emeril adds red wine (fortify).

Taste and add salt, pepper, oregano, sugar as you want.

Serve over some hot fresh pasta.

Drink the rest of the red wine.

Start with your ingredients... 2 cans sauce, 1 small can paste, 1lb beef, garlic, onion, bay leaves, oregano, pepper and sugar...

 Start with 1 clove garlic and some onion flakes (or real onion if you got one), brown slightly and chunk in 1 lb of ground beef.  I like using the leanest possible so that I don't HAVE to drain it...

Break the beef up... now, if you like big chunks of beef, don't break it up as much...

I like the beef broken down to pretty small bits... really incorporates wll in the sauce and gives you more of a meat sauce versus sauce with meat in it...

Add the sauce, the paste some oregano, pepper, about 2 tbls of sugar and 1 - 2 bay leaves...

Stir well and let simmer for as long as you want, or just enough to heat through.  That's what's great here, you don't have to wait if you don't want to...  Just watch it if you want to simmer for a while.  I ended up adding a couple of ladle's of the pasta water (drank all of the red wine) to thin it out some...

Put some over your noodles and your done.  Well, go eat it, then your done.
